Ingredients
Dry Ingredients
- 1 box White Cake Mix (13.25 oz, e.g., Betty Crocker)
- 4 teaspoons All-Purpose Flour
- 1 teaspoon Cornstarch
- 1/4 teaspoon Salt
Wet Ingredients
- 1/2 cup Vegetable Oil
- 2 Eggs, room temperature
- 6 drops Green Gel Food Coloring
Coating
- 1/3 cup Granulated Sugar
- 1/3 cup Powdered Sugar (Confectioners Sugar)
Instructions
- Combine Dry Ingredients: In a medium mixing bowl, add the white cake mix, all-purpose flour, cornstarch, and salt. Stir these dry ingredients together to ensure they are evenly mixed.
- Add Wet Ingredients: Add the two eggs and vegetable oil to the dry mixture. Stir by hand thoroughly to create a thick dough.
- Add Food Coloring: Mix in green gel food coloring drop by drop until the desired vibrant color is achieved. Gel coloring provides more intense color than liquid, so start with less and add gradually.
- Chill Dough: Place the dough in the refrigerator to chill for 1-2 hours, or until it is firm enough to roll into balls that maintain their shape.
- Prepare Baking Sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or foil and lightly spray with nonstick cooking spray to prevent sticking.
- Form and Coat Cookies: Roll approximately 1 tablespoon of chilled dough into a ball. First, roll the ball in granulated sugar to coat, then roll again generously in powdered sugar so the coating is thick on all sides. Place the coated balls on the prepared baking sheet, spacing them apart to allow for slight spreading.
- Bake Cookies: Bake the cookies on the middle rack of the oven for 11 minutes. They should appear cracked and slightly set when done.
- Cool Cookies: Remove the baking sheet from the oven carefully and let the cookies cool on the sheet for 2 minutes before transferring them to a wire cooling rack to cool completely.
- Repeat and Serve: Repeat the rolling, coating, and baking process for remaining dough. Serve the cookies once fully cooled and set for best texture and flavor.
