Ingredients

Crust

  • 1-3/4 cups Mint Oreos (about 24 cookies, plus more cookies for garnish; any chocolate-mint sandwich cookie works)
  • 4 tablespoons unsalted butter (melted)
  • 1/8 teaspoon salt

Filling and Topping

  • 1 (48-ounce) container mint chip ice cream (or mint brownie ice cream, slightly softened)
  • 1 (8-ounce) container frozen whipped topping (completely thawed)
  • 1 (11.5-ounce) container hot fudge topping


Instructions

  1. Melt Butter: Melt the butter in a microwave-safe bowl. Set it aside to cool for 5 minutes to prevent the crust from becoming greasy.
  2. Make Crust: Using a powerful blender or food processor, blend the whole Mint Oreos until you get fine crumbs. Re-blend any large chunks for an even texture. Measure the crumbs and transfer to a bowl. Add the cooled melted butter and a pinch of salt. Stir until a thick dough forms. Press the mixture firmly into the bottom and up the sides of a pie pan using the bottom of a 1/4-cup measuring cup. Freeze the crust while preparing the filling.
  3. Add Ice Cream: Scoop the softened mint chip ice cream into the chilled crust. Smooth the top evenly with a spoon or spatula. Freeze for 30 minutes or until solid.
  4. Add Hot Fudge: Remove the pie from the freezer and evenly spread the hot fudge topping over the ice cream layer. Dollop scoops of fudge and spread carefully with the back of a spoon. Loosely cover and freeze for another 30 minutes.
  5. Add Whipped Cream: Remove pie from freezer, then spread the thawed whipped topping evenly over the fudge layer. Use as much or as little as preferred. Sprinkle any reserved cookie crumbs on top if desired. Return to freezer and freeze until very firm, approximately 4 to 8 hours.
  6. Garnish and Serve: Chop 3 to 5 leftover Mint Oreos coarsely and sprinkle over the pie. Before slicing, let the pie sit at room temperature for 5 minutes to soften slightly. Use a hot, sharp knife (heated under hot water then dried) to cut into slices. Serve immediately and store leftovers in the freezer.
