Description

Delight in this refreshing Grasshopper Mint Parfait, a no-bake, layered dessert featuring crushed Keebler Grasshopper Cookies, creamy peppermint-infused filling made with cream cheese and Cool Whip, and a hint of green food coloring for a festive look. Ready in just 15 minutes, this parfait is perfect for a quick, minty treat that serves six.

Ingredients

Ingredients

  • 1 (10 oz) bag of KEEBLER® GRASSHOPPER® COOKIES
  • 1 (8 oz) block cream cheese, at room temperature
  • 1/3 cup sugar
  • 1 teaspoon peppermint extract
  • 1 (8 oz) tub Cool Whip
  • Green food coloring, as desired

Instructions

  1. Pulse Cookies: Place the KEEBLER Grasshopper Cookies in a food processor and pulse until they are broken down into fine crumbles, forming the base and layer for the parfait.
  2. Whip Cream Cheese and Sugar: In a standing mixer, beat the room temperature cream cheese together with the sugar on medium-high speed for about 1 minute, until the mixture is smooth and creamy.
  3. Fold in Cool Whip and Flavor: Add the Cool Whip and peppermint extract to the whipped cream cheese mixture. Optionally, add a few drops of green food coloring to achieve a festive mint color. Continue whipping on medium-high speed for about 30 seconds until everything is well blended and fluffy.
  4. Assemble Parfaits: In serving glasses, alternate layers of the cookie crumbs and the mint cream filling, creating a visually appealing layered parfait. Repeat layers as desired, finishing with a layer of the mint filling on top.
  5. Chill and Serve: Refrigerate the parfaits for at least 15 minutes to allow them to set and the flavors to meld. Serve chilled as a refreshing dessert.

Notes

  • For best results, ensure the cream cheese is fully softened to avoid lumps in the filling.
  • Adjust the amount of peppermint extract to your taste preference; start with 1 teaspoon and add more if desired.
  • If you don’t have a food processor, place the cookies in a sealed plastic bag and crush with a rolling pin or heavy object.
  • Parfaits can be made ahead and stored in the fridge for up to 24 hours.
  • Use dairy-free Cool Whip and cream cheese alternatives to make this dessert vegan-friendly.
