Instructions

  1. Combine Butter and Dry Ingredients: Add cubes of cold butter, gluten free flour, and salt to a food processor. Pulse 4 to 5 times until the mixture becomes crumbly.
  2. Add Cold Water: Pour in cold water and pulse another 4 to 5 times or until the mixture is very crumbly and starts forming small clumps.
  3. Form Dough Ball: Lightly flour the countertop and rolling pin. Pour the crumbly dough onto the floured surface. Use your hands to gather and shape it into one large dough ball.
  4. Roll and Fold Dough: Roll the dough out into a rectangle about ¼ to ½ inch thick. Fold the dough in half, then fold in half again to create layers.
  5. Chill the Dough: Wrap the folded dough tightly and refrigerate for 2 hours to allow the butter to firm up and the dough to rest.
  6. Prepare for Baking: Remove the dough from the fridge. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  7. Rest Dough at Room Temperature: Let the dough sit at room temperature for about 20 minutes to soften slightly for easier rolling. If dough breaks, let it rest another 10 minutes.
