Instructions
- Combine Dry Ingredients: In a large mixing bowl, whisk together 2 cups gluten free flour blend, 1 tablespoon cane sugar, and 1/4 teaspoon salt until thoroughly combined.
- Cut in Butter: Add the cold 1/2 cup unsalted butter to the dry mixture. Using a pastry blender, cut the butter into the flour until the mixture resembles coarse crumbs.
- Add Wet Ingredients: Mix in 1/3 cup water and 1 large egg into the flour and butter mixture, stirring until a flaky dough forms. Add 2-3 additional tablespoons of water if the dough is too dry.
- Prepare Dough for Rolling: Place the dough onto a piece of wax paper. Dust the dough and the wax paper lightly with flour to prevent sticking.
- Roll and Cut Dough Circles: Roll the dough out to about 1/4 inch thickness or your preferred thickness. Using a large circle cutter or a large coffee mug (about 3 inches or larger), cut out circles from the dough.
