Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a casserole dish to prevent the soufflé from sticking during baking.
- Cook Carrots: Place the coarsely diced carrots in a large pot and cover with water. Bring to a boil over medium-high heat, then simmer for 15 to 20 minutes until the carrots are tender and easily pierced with a fork.
- Mash Carrots: Drain the carrots thoroughly, then transfer them to a large bowl. Using a potato masher or food processor, mash the carrots until they achieve a smooth, silky texture.
- Combine Wet Ingredients: Stir the melted butter and whisked eggs into the mashed carrots, mixing thoroughly until fully integrated.
- Mix Dry Ingredients: In a separate bowl, sift together the gluten-free flour, baking powder, salt, and sugar. Gradually fold this dry mixture into the carrot mixture, stirring gently until the batter is smooth and evenly blended.
- Bake: Pour the batter into the prepared casserole dish. Bake in the preheated oven for 45 minutes or until the soufflé is golden on top, puffed up, and set in the center. Test doneness by inserting a toothpick; it should come out clean.
