- 1 ½ teaspoons salt
- 3 ½ to 4 cups bread flour (plus more as needed)
- ¾ tablespoon fresh chopped rosemary
- 2 tablespoons fresh parsley, finely chopped (fully patted dry)
- 1 teaspoon dried oregano
Garlic Herb Butter
- 6 tablespoons unsalted butter, melted
- ½ tablespoon Italian seasoning
- 3 cloves garlic, minced
Instructions
- Activate the yeast: Pour the warm milk (110 to 115 degrees F) into the bowl of a stand mixer. Stir in 1 teaspoon of granulated sugar and the active dry yeast. Let it sit for 10-15 minutes until the mixture becomes frothy, indicating the yeast is active. If it does not froth, discard and start over with fresh yeast.
- Make the dough: Attach the dough hook to the mixer. On medium speed, add the remaining 2 tablespoons sugar, lightly beaten eggs, melted butter, garlic powder, and salt to the yeast mixture. Mix well until combined.
- Add flour: With the mixer on medium-low, incorporate 3 cups of bread flour one cup at a time, scraping down the sides of the bowl as needed. Gradually add more flour in 1/4 cup increments until a manageable dough forms. Approximately 3 ½ cups will be used.
- Knead the dough: Increase the mixer speed to high and knead the dough for about 3 minutes until it pulls away from the bowl sides, becoming smooth, stretchy, moist, and slightly sticky. Alternatively, knead by hand for 8-10 minutes.
- Add herbs: On low speed, mix in the fresh chopped rosemary, parsley, and dried oregano until evenly distributed throughout the dough.
- Hand knead: Transfer the dough to a lightly floured surface and knead by hand for 3-4 minutes. Add more flour if too sticky. The dough should be smooth, stretchy, moist, and slowly spring back when poked but not overworked.
- First rise: Shape the dough into a ball and place it in a lightly oiled bowl, coating the dough with oil as well. Cover tightly with plastic wrap and let it rise in a warm place for about 1 hour or until doubled in size.
- Shape buns: Punch down the risen dough to release air. Move it to a clean non-floured surface and divide it into 12 equal pieces by cutting in halves and then halves again. Shape each piece into a tight ball, pinching the bottom to secure.
- Second rise: Arrange the shaped buns in a lightly greased 9×13-inch baking pan. Cover with plastic wrap and let rise in a warm environment for 1 to 1.5 hours until doubled in size.
- Preheat oven: While the rolls are rising, preheat your oven to 350 degrees F (175 degrees C).
- Prepare garlic herb butter: In a small bowl, mix together the melted butter, Italian seasoning, and minced garlic.
- Brush rolls: Once risen, brush the garlic herb butter generously over the tops of the rolls.
- Bake: Bake the rolls in the preheated oven for 18-20 minutes until golden brown and tall.
