Description

These Garlic Dinner Rolls are soft, fluffy, and full of savory garlic and herb flavors. The dough is enriched with eggs and butter for a tender crumb, then infused with garlic powder, fresh herbs, and a delicious garlic herb butter brush before baking to golden perfection. Perfect as a comforting side for any dinner or for enjoying warm with butter.

Ingredients

Dough Ingredients

  • 1 cup whole milk, warmed to 110-115 degrees F
  • 2 ¼ teaspoons active dry yeast (equivalent to a 0.25 ounce package)
  • 2 tablespoons granulated sugar, plus 1 teaspoon
  • 2 large eggs, lightly beaten
  • ¼ cup unsalted butter, melted and cooled
  • 1 teaspoon garlic powder
  • 1 ½ teaspoons salt
  • 3 ½ to 4 cups bread flour (plus more as needed)
  • ¾ tablespoon fresh chopped rosemary
  • 2 tablespoons fresh parsley, finely chopped (fully patted dry)
  • 1 teaspoon dried oregano

Garlic Herb Butter

  • 6 tablespoons unsalted butter, melted
  • ½ tablespoon Italian seasoning
  • 3 cloves garlic, minced

Instructions

  1. Activate the yeast: Pour the warm milk (110 to 115 degrees F) into the bowl of a stand mixer. Stir in 1 teaspoon of granulated sugar and the active dry yeast. Let it sit for 10-15 minutes until the mixture becomes frothy, indicating the yeast is active. If it does not froth, discard and start over with fresh yeast.
  2. Make the dough: Attach the dough hook to the mixer. On medium speed, add the remaining 2 tablespoons sugar, lightly beaten eggs, melted butter, garlic powder, and salt to the yeast mixture. Mix well until combined.
  3. Add flour: With the mixer on medium-low, incorporate 3 cups of bread flour one cup at a time, scraping down the sides of the bowl as needed. Gradually add more flour in 1/4 cup increments until a manageable dough forms. Approximately 3 ½ cups will be used.
  4. Knead the dough: Increase the mixer speed to high and knead the dough for about 3 minutes until it pulls away from the bowl sides, becoming smooth, stretchy, moist, and slightly sticky. Alternatively, knead by hand for 8-10 minutes.
  5. Add herbs: On low speed, mix in the fresh chopped rosemary, parsley, and dried oregano until evenly distributed throughout the dough.
  6. Hand knead: Transfer the dough to a lightly floured surface and knead by hand for 3-4 minutes. Add more flour if too sticky. The dough should be smooth, stretchy, moist, and slowly spring back when poked but not overworked.
  7. First rise: Shape the dough into a ball and place it in a lightly oiled bowl, coating the dough with oil as well. Cover tightly with plastic wrap and let it rise in a warm place for about 1 hour or until doubled in size.
  8. Shape buns: Punch down the risen dough to release air. Move it to a clean non-floured surface and divide it into 12 equal pieces by cutting in halves and then halves again. Shape each piece into a tight ball, pinching the bottom to secure.
  9. Second rise: Arrange the shaped buns in a lightly greased 9×13-inch baking pan. Cover with plastic wrap and let rise in a warm environment for 1 to 1.5 hours until doubled in size.
  10. Preheat oven: While the rolls are rising, preheat your oven to 350 degrees F (175 degrees C).
  11. Prepare garlic herb butter: In a small bowl, mix together the melted butter, Italian seasoning, and minced garlic.
  12. Brush rolls: Once risen, brush the garlic herb butter generously over the tops of the rolls.
  13. Bake: Bake the rolls in the preheated oven for 18-20 minutes until golden brown and tall.
  14. Final butter brush: Remove the rolls from the oven and immediately brush with additional melted butter for a shiny, flavorful finish.
  15. Serve: Allow the rolls to cool slightly, then serve warm and enjoy the soft, garlicky goodness.

Notes

  • Ensure the milk is warmed to 110-115°F to activate the yeast properly without killing it.
  • The dough should be slightly sticky but manageable; add flour gradually to avoid dry rolls.
  • Creating a warm environment for rising can be done by placing the covered dough in an oven with the light on or near a warm stove.
  • Do not overknead the dough by hand as it can make the rolls tough.
  • Use fresh herbs for optimal flavor and ensure they are dry to prevent extra moisture in the dough.
  • Brush rolls with garlic herb butter both before and after baking for maximum flavor and shine.
