Ingredients

For the Pineapple Filling

  • 3 cups fresh pineapple chunks (approx. 1 pineapple)
  • 1 tbsp cornflour/corn starch
  • 3 tbsp brown sugar

For the Crumble Topping

  • 1/3 cup (50 g) all-purpose/plain flour
  • 3/4 cup (60 g) old-fashioned rolled oats
  • 1/3 cup (70 g) brown sugar
  • 1/2 cup (125 g) unsalted butter, cold and cut into cubes


Instructions

  1. Preheat the oven: Set your oven to 175°C (350°F) and allow it to fully preheat while you prepare the ingredients.
  2. Prepare baking dish: Grease a 2.3 litre (2.4 quart) ceramic or glass baking dish with a little butter to prevent sticking.
  3. Prepare the pineapple: Using a sharp knife, remove the top and base of the pineapple, then stand it upright and carefully peel off the skin, avoiding too much flesh loss. Remove any brown spots or “eyes” with a small knife or spoon. Cut the pineapple lengthwise into quarters, remove the tough core from each, and chop the pineapple into bite-sized chunks.
  4. Mix pineapple filling: In a bowl, combine the pineapple chunks, cornflour, and 3 tablespoons of brown sugar. Toss gently until evenly coated, then transfer this mixture into the prepared baking dish.
  5. Prepare the crumble topping: In another bowl, mix together the remaining brown sugar, all-purpose flour, and rolled oats. Add the cold, cubed butter. Begin by stirring, then rub the butter between your fingers until the mixture becomes crumbly and forms coarse crumbs.
  6. Assemble the crisp: Evenly spread the crumble mixture over the pineapple filling in the baking dish, making sure to cover it well.
  7. Bake: Place the dish in the preheated oven and bake for 40-45 minutes until the topping is lightly golden brown and the pineapple filling is bubbling around the edges.
