Ingredients

Mango Layer

  • 1 ½ cups fresh mango, peeled (from about 2 whole mangoes, approx. 333g) (frozen mango works as well)
  • 1 tablespoon pure honey
  • Pinch of kosher salt

Cherry Layer

  • 1 ½ cups fresh cherries, pitted (about 271g)
  • 1 tablespoon pure honey
  • Pinch of kosher salt

Yogurt Layer

  • 1 cup full-fat Greek yogurt
  • 1 tablespoon pure honey


Instructions

  1. Prepare the Mango Layer: Add the peeled mango, 1 tablespoon of honey, and a pinch of kosher salt into a food processor or blender. Puree until very smooth, about one minute. Transfer to a bowl and set aside. Rinse the food processor completely before making the next layer.
  2. Prepare the Cherry Layer: Place the pitted cherries, 1 tablespoon honey, and a pinch of salt in the food processor or blender. Puree until completely smooth, about one minute. Set aside the cherry mixture.
  3. Prepare the Yogurt Layer: In a separate bowl, whisk the Greek yogurt with the remaining 1 tablespoon of honey until smooth and free of lumps.
  4. Assemble the Popsicles – Mango Layer: Pour the mango puree evenly into 3-ounce popsicle molds, filling each mold. Use a clean cloth or paper towel to wipe any spills inside the mold edges to create clean layers. Freeze the molds for 30 minutes or until the mango layer is slightly frozen but not solid. Do not insert popsicle sticks yet.
  5. Assemble the Popsicles – Yogurt Layer: Spoon the yogurt mixture on top of the mango layer in each mold, filling them up. Clean any excess from the rims and return to the freezer for another 30 minutes until the yogurt layer is slightly frozen. Do not insert popsicle sticks yet.
  6. Assemble the Popsicles – Cherry Layer: Carefully pour the cherry puree into each mold on top of the yogurt layer, filling them without overfilling. Insert popsicle sticks or the mold’s cover as per the manufacturer’s instructions. Freeze the popsicles for at least 6 hours or overnight until firm.
  7. Unmold the Popsicles: To remove the popsicles, follow the mold manufacturer’s directions. For easier removal, dip the mold briefly in warm water for about a minute, then gently pop the popsicles out.

Notes

  • Frozen mango can be used as a substitute for fresh mango—no need to thaw before blending.
  • If you prefer less sweetness, adjust the honey quantity to taste.
  • Make sure each layer is slightly frozen before adding the next to create distinct, colorful layers.
  • Use high-quality, ripe mangoes and cherries for the best flavor and texture.
