Dubai Ice Cream Sandwiches are a decadent frozen dessert featuring layers of buttery Oreo crumb base, smooth pistachio and whipped cream filling, a crunchy kataifi-pistachio topping, and a final Oreo crumb layer. This no-bake treat combines Middle Eastern flavors with a creamy, icy texture, perfect for a refreshing indulgence.


Ingredients

Base and Topping

  • 500 g Oreo cookies
  • 170 g butter, melted
  • 180 g kataifi

Filling

  • 220 g pistachio cream (for kataifi layer)
  • 500 ml whipped cream
  • 150 ml condensed milk
  • 120 g pistachio cream (for filling)
  • 1 tsp almond extract


Instructions

  1. Prepare Kataifi Layer: Melt butter in a pan over low heat. Add kataifi and cook, stirring frequently for 5–7 minutes on low to medium heat until golden and crisp. Remove from heat and stir in 220 g pistachio cream until the kataifi is fully coated. Set this mixture aside to cool.
  2. Prepare Oreo Base: Line a 9×9-inch square tin with parchment paper. Crush Oreo cookies finely using a food processor until fine crumbs form. Transfer the crumbs to a bowl, mix with melted butter until combined. Press half of this crumb mixture firmly and evenly into the base of the prepared tin to form the base layer.
  3. Make Pistachio Cream Filling: In a large bowl, whip the heavy cream until stiff peaks form. Add the condensed milk and almond extract, then whisk until smooth. Stir in 120 g pistachio cream and whisk again to combine thoroughly.
  4. Assemble Filling Layer: Pour the pistachio cream filling over the Oreo base in the tin. Use a spatula to smooth it out evenly. Cover the tin with plastic wrap and place it in the freezer for 2 hours or until the filling is partially set.
  5. Add Kataifi Topping: Remove the tin from the freezer and discard the plastic wrap. Gently spread the cooled kataifi-pistachio mixture evenly over the partially frozen filling layer.
  6. Top with Remaining Oreo Crumbs: Sprinkle the remaining Oreo crumb mixture over the kataifi layer and press gently to set it in place. Cover the tin again with plastic wrap and freeze for at least 6 hours, preferably overnight, until fully set.
  7. Serve: Once fully frozen and set, remove the plastic wrap carefully and cut the dessert into even bars or squares. Serve chilled and enjoy this luscious, indulgent treat.
