Dubai Ice Cream Sandwiches are a decadent frozen dessert featuring layers of buttery Oreo crumb base, smooth pistachio and whipped cream filling, a crunchy kataifi-pistachio topping, and a final Oreo crumb layer. This no-bake treat combines Middle Eastern flavors with a creamy, icy texture, perfect for a refreshing indulgence.

- 500 g Oreo cookies
- 170 g butter, melted
- 180 g kataifi
Filling
- 220 g pistachio cream (for kataifi layer)
- 500 ml whipped cream
- 150 ml condensed milk
- 120 g pistachio cream (for filling)
- 1 tsp almond extract
Instructions
- Prepare Kataifi Layer: Melt butter in a pan over low heat. Add kataifi and cook, stirring frequently for 5–7 minutes on low to medium heat until golden and crisp. Remove from heat and stir in 220 g pistachio cream until the kataifi is fully coated. Set this mixture aside to cool.
- Prepare Oreo Base: Line a 9×9-inch square tin with parchment paper. Crush Oreo cookies finely using a food processor until fine crumbs form. Transfer the crumbs to a bowl, mix with melted butter until combined. Press half of this crumb mixture firmly and evenly into the base of the prepared tin to form the base layer.
- Make Pistachio Cream Filling: In a large bowl, whip the heavy cream until stiff peaks form. Add the condensed milk and almond extract, then whisk until smooth. Stir in 120 g pistachio cream and whisk again to combine thoroughly.
- Assemble Filling Layer: Pour the pistachio cream filling over the Oreo base in the tin. Use a spatula to smooth it out evenly. Cover the tin with plastic wrap and place it in the freezer for 2 hours or until the filling is partially set.
- Add Kataifi Topping: Remove the tin from the freezer and discard the plastic wrap. Gently spread the cooled kataifi-pistachio mixture evenly over the partially frozen filling layer.
- Top with Remaining Oreo Crumbs: Sprinkle the remaining Oreo crumb mixture over the kataifi layer and press gently to set it in place. Cover the tin again with plastic wrap and freeze for at least 6 hours, preferably overnight, until fully set.
- Serve: Once fully frozen and set, remove the plastic wrap carefully and cut the dessert into even bars or squares. Serve chilled and enjoy this luscious, indulgent treat.

- If kataifi is unavailable, shredded phyllo dough can be a substitute.
