Ingredients

Chocolate Topping
- 1½ cup chocolate chips
- 2 teaspoons coconut oil
Instructions
- Combine Peanut Butter Mixture: In a mixing bowl, thoroughly combine the natural peanut butter, melted coconut oil, vanilla extract, honey, and Rice Krispies cereal until evenly mixed and the cereal is well coated.
- Fill Muffin Mold: Spoon about 3 tablespoons of the peanut butter mixture into each cavity of a muffin mold, pressing down slightly to compact and form an even layer.
- Freeze Peanut Butter Layer: Place the muffin mold in the freezer for 30 minutes to 1 hour, or until the peanut butter mixture is firm and set completely.
- Melt Chocolate: In a microwave-safe bowl, combine the chocolate chips and 2 teaspoons of coconut oil. Microwave on high in 20-second intervals, stirring well between each, until the chocolate is fully melted and smooth.
- Top with Chocolate: Spoon the melted chocolate over the frozen peanut butter bases in the muffin mold, covering them completely.
- Final Freeze: Return the muffin mold to the freezer and freeze for at least 1 hour to allow the chocolate to harden and the peanut butter cups to firm up completely.
- Serve or Store: Once set, remove the peanut butter cups from the mold. Enjoy immediately or transfer to a freezer-safe bag and store in the freezer for later indulgence.
