Description

Delight in these Crunchy Peanut Butter Cups, a no-bake, frozen treat combining creamy peanut butter, crispy Rice Krispies, and a smooth chocolate coating. Perfect as a sweet snack or dessert, they’re easy to prepare and wonderfully satisfying.

Ingredients

Peanut Butter Mixture

  • 1½ cup natural runny peanut butter
  • ½ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • ¼ cup honey (or maple syrup, or more to taste)
  • 1¼ cup Rice Krispies cereal

Chocolate Topping

  • 1½ cup chocolate chips
  • 2 teaspoons coconut oil

Instructions

  1. Combine Peanut Butter Mixture: In a mixing bowl, thoroughly combine the natural peanut butter, melted coconut oil, vanilla extract, honey, and Rice Krispies cereal until evenly mixed and the cereal is well coated.
  2. Fill Muffin Mold: Spoon about 3 tablespoons of the peanut butter mixture into each cavity of a muffin mold, pressing down slightly to compact and form an even layer.
  3. Freeze Peanut Butter Layer: Place the muffin mold in the freezer for 30 minutes to 1 hour, or until the peanut butter mixture is firm and set completely.
  4. Melt Chocolate: In a microwave-safe bowl, combine the chocolate chips and 2 teaspoons of coconut oil. Microwave on high in 20-second intervals, stirring well between each, until the chocolate is fully melted and smooth.
  5. Top with Chocolate: Spoon the melted chocolate over the frozen peanut butter bases in the muffin mold, covering them completely.
  6. Final Freeze: Return the muffin mold to the freezer and freeze for at least 1 hour to allow the chocolate to harden and the peanut butter cups to firm up completely.
  7. Serve or Store: Once set, remove the peanut butter cups from the mold. Enjoy immediately or transfer to a freezer-safe bag and store in the freezer for later indulgence.

Notes

  • Use all-natural, runny peanut butter for best texture and flavor.
  • Adjust honey or maple syrup sweetness according to taste in the peanut butter mixture.
  • If you prefer a softer chocolate coating, reduce freezing time slightly.
  • Store peanut butter cups in the freezer to maintain firmness.
  • For a nut-free option, substitute peanut butter with sunflower seed butter.
