Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
For the Creamy Sauce:
- 1 tbsp butter
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream (or half-and-half for a lighter option)
- ½ cup grated Parmesan cheese
- 1 tsp dried thyme (or 1 tbsp fresh thyme)
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
Cook the Chicken:
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt, pepper, and garlic powder.
- Cook for 5-6 minutes per side, until golden brown and cooked through.
- Remove from the skillet and set aside.
Make the Creamy Sauce:
- In the same skillet, melt butter over medium heat.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth, stirring to loosen any browned bits from the pan.
- Bring to a simmer and cook for 2-3 minutes. Add heavy cream and stir to combine.
Finish the Sauce:
- Stir in Parmesan cheese and thyme, cooking until the sauce thickens (about 3-4 minutes).
- Adjust seasoning with salt and pepper to taste.
Combine Chicken and Sauce:
- Return the cooked chicken to the skillet, spooning sauce over the top.
- Let simmer for 3-4 minutes to reheat the chicken and meld the flavors.
Serve and Garnish:
- Sprinkle with fresh parsley and serve immediately.
Notes
- Add sautéed mushrooms to the sauce for extra depth of flavor.
- For a low-carb option, serve over zucchini noodles or cauliflower rice.
- Substitute half-and-half for heavy cream for a lighter version.
- Pair with mashed potatoes or pasta for a heartier meal.
