Ingredients

Wet Ingredients

  • 2/3 cup milk
  • 1/3 cup vegetable oil
  • 3 eggs
  • 4 very ripe bananas

Dry Ingredients

  • 13.25 oz box yellow cake mix

Filling

  • 8 oz cream cheese, softened
  • 14 oz sweetened condensed milk

Frosting and Toppings

  • 12 oz cream cheese frosting
  • 2 tablespoons chopped walnuts
  • 2 tablespoons Skor toffee bits

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to prepare for baking the cake.
  2. Mix wet ingredients: In a large mixing bowl, combine the milk, vegetable oil, eggs, and very ripe bananas.
  3. Blend the wet ingredients: Use an electric mixer to mix thoroughly until the bananas are well incorporated and no large chunks remain.
  4. Add cake mix: Pour the yellow cake mix into the wet ingredients bowl.
  5. Combine cake batter: Continue mixing with the electric mixer until the batter is smooth and all ingredients are fully blended.
  6. Prepare baking dish: Spray a 9 x 13 inch baking dish with cooking spray to prevent sticking.
  7. Pour batter into dish: Transfer the prepared cake batter evenly into the baking dish.
  8. Bake the cake: Place the dish in the oven and bake for 32 to 38 minutes, until the top is golden brown and a toothpick inserted in the center comes out mostly clean, with just a few crumbs attached.
  9. Cool down: Remove the cake from the oven and allow it to cool completely before adding the filling.
  10. Poke holes in cake: Using the handle of a wooden spoon, poke rows of holes approximately one inch apart across the entire cake surface.
  11. Make the cream cheese filling: In a mixing bowl, combine the softened cream cheese and the sweetened condensed milk.
  12. Mix filling: Beat the cream cheese and condensed milk together with an electric mixer until the mixture is smooth and creamy.
  13. Fill cake holes: Pour the cream cheese mixture evenly over the cake, spreading it and pushing it gently into the holes to soak in.
  14. Chill the cake: Cover the cake and refrigerate it for one hour to allow the filling to set properly.
  15. Add frosting: After chilling, remove the cake from the refrigerator and spoon the cream cheese frosting over the top, spreading it evenly to cover the entire surface.
  16. Add toppings: Sprinkle the chopped walnuts and Skor toffee bits over the frosted cake for added crunch and flavor.
  17. Serve or store: Serve immediately or cover and refrigerate until ready to serve.
  18. Enjoy: Cut into pieces and enjoy this decadent cream cheese banana bread poke cake!

Notes

  • Ensure bananas are very ripe for maximum sweetness and moisture in the cake.
  • Use softened cream cheese and frosting for smooth mixing and easy spreading.
  • The poke holes allow the filling to soak in, creating a moist and flavorful dessert.
  • Chilling the cake helps the filling set and enhances the taste.
  • For a nut-free version, omit the walnuts and toffee bits or substitute with your preferred topping.
