Instructions
- Blend the base: Combine the Greek yogurt, coconut milk, granulated sugar, and vodka in a blender. Blend until the mixture is smooth and well combined to ensure the sugar dissolves evenly.
- Chill the mixture: Cover the blended mixture and refrigerate it for at least 2 hours until it is thoroughly chilled, which helps improve the texture when freezing.
- Process in ice cream maker: Pour the chilled yogurt mixture into your ice cream maker and process according to the manufacturer’s instructions. This usually takes about 15 minutes and will turn the mixture into soft serve frozen yogurt.
- Incorporate pineapple: Transfer the soft frozen yogurt into a large container with a lid. Gently stir in the crushed, drained pineapple, mixing thoroughly to evenly distribute the fruit and prevent icy shards.
