Ingredients
Puff Pastry

- 1 teaspoon rum, bourbon, brandy, or apple liqueur (optional)
Egg Wash
- 1 large egg (beaten with 2 teaspoons water)
Glaze
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1/4 teaspoon pure vanilla extract
Instructions
- Cook the Apple Filling: In a medium saucepan, melt the butter over medium heat. Add the diced apples and cook for 3 minutes, stirring occasionally. Stir in the sugar, cinnamon, allspice, nutmeg (if using), and salt. Continue cooking, stirring often, until the apples are softened and caramelized. If using, add the rum and stir well. Remove from heat and allow the filling to cool to room temperature. To speed cooling, transfer the filling to a bowl and refrigerate.
- Roll Out the Puff Pastry: Line a large baking sheet with parchment paper. Remove one sheet of puff pastry from the refrigerator. On a lightly floured surface, roll the pastry into an 11-inch square. Using a sharp knife or pizza cutter, slice it into four equal squares.
- Assemble the Turnovers: Scoop one-eighth of the apple filling onto one diagonal half of each square, placing it near a corner and leaving a 1/2-inch border around the edges. Lightly brush the pastry edges adjacent to the filling with the egg wash. Fold the unfilled half of the square over the filling to form a triangle. Press the edges together to seal the turnover, using the tines of a fork to crimp and seal the edges securely. Transfer assembled turnovers to the prepared baking sheet, spacing them about 1 inch apart. Repeat with the remaining pastry sheet and filling.
