Ingredients

Crust

  • 2 bags circus animal cookies (9-ounce each)
  • ¼ cup butter (melted)

Filling

  • 1 box instant white chocolate pudding mix (3.4-ounce)
  • 1 ½ cups milk
  • 16 ounces whipped topping (thawed)
  • pink food coloring (optional, 1-2 drops)

Toppings

  • ¼ cup rainbow nonpareil sprinkles


Instructions

  1. Line the Pan: Line an 8 x 8-inch square baking pan with parchment paper, ensuring the paper extends over the edges for easy removal later. Set aside.
  2. Make the Crust: Place 1 package (9-ounce) of Circus Animal Cookies into a food processor. Pulse until the cookies are coarsely crushed. Pour in the melted butter and process again until combined. Spread the crust mixture evenly into the prepared pan.
  3. Prepare the Filling: In a large mixing bowl, combine the instant white chocolate pudding mix and milk. Optionally, add 1 to 2 drops of pink food coloring to tint the pudding a soft pink color. Fold in half of the whipped topping until the mixture becomes smooth and creamy.
  4. Assemble Filling Layer: Pour the pudding and whipped topping mixture on top of the cookie crust and smooth it out evenly with a spatula.
