Ingredients
Crust
- 2 bags circus animal cookies (9-ounce each)
- ¼ cup butter (melted)
Filling
- 1 box instant white chocolate pudding mix (3.4-ounce)
- 1 ½ cups milk
- 16 ounces whipped topping (thawed)
- pink food coloring (optional, 1-2 drops)
Toppings
- ¼ cup rainbow nonpareil sprinkles
Instructions
- Line the Pan: Line an 8 x 8-inch square baking pan with parchment paper, ensuring the paper extends over the edges for easy removal later. Set aside.
- Make the Crust: Place 1 package (9-ounce) of Circus Animal Cookies into a food processor. Pulse until the cookies are coarsely crushed. Pour in the melted butter and process again until combined. Spread the crust mixture evenly into the prepared pan.
- Prepare the Filling: In a large mixing bowl, combine the instant white chocolate pudding mix and milk. Optionally, add 1 to 2 drops of pink food coloring to tint the pudding a soft pink color. Fold in half of the whipped topping until the mixture becomes smooth and creamy.
- Assemble Filling Layer: Pour the pudding and whipped topping mixture on top of the cookie crust and smooth it out evenly with a spatula.
