Ingredients
Glaze
- ¼ cup unsalted butter
- 3 ounces cream cheese, softened
- ¾ cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
Pancakes
- 1 cup all-purpose flour
- 2 tablespoons brown sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
- 1 ½ teaspoons ground cinnamon
- 1 egg
- 1 cup buttermilk
- ¼ cup unsalted butter, melted
- Nonstick cooking spray, for cooking
Instructions
- Prepare the glaze: Melt the butter in a pot over medium heat. Once melted, reduce the heat to low and whisk in the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and combined. Remove from heat and set aside to cool slightly before serving.
- Mix dry ingredients: In a medium mixing bowl, whisk together the all-purpose flour, brown sugar, baking powder, baking soda, kosher salt, and ground cinnamon until evenly incorporated.
- Mix wet ingredients: In a separate bowl, whisk the egg, buttermilk, and melted butter until the mixture is homogeneous and smooth.
- Combine wet and dry: Pour the wet ingredient mixture into the dry ingredients. Stir gently just until combined; it’s okay if there are some small lumps remaining to ensure tender pancakes.
- Preheat skillet: Heat a large skillet or griddle over medium heat. Lightly coat the surface with nonstick cooking spray to prevent sticking.
- Cook pancakes: Once the skillet is hot, drop ½ cup portions of batter onto the skillet, gently spreading into rounds with the back of a spoon. Cook until the edges look slightly dry and bubbles form on top, about 3 to 4 minutes.
- Flip and finish cooking: Carefully flip the pancakes and cook the other side for another 2 to 3 minutes, or until golden brown and cooked through. Work in batches as needed depending on pan size, cooking 2 to 3 pancakes at a time.
- Serve: Transfer pancakes to plates and generously drizzle the cream cheese glaze over the top while still warm. Enjoy immediately for the best flavor and texture.
Notes
- Do not overmix the batter to keep pancakes tender and fluffy; a few lumps are fine.
- If you don’t have buttermilk, you can substitute by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk and letting it sit for 5 minutes.
- Use room temperature ingredients for easier mixing and better texture.
- For fluffier pancakes, you can let the batter rest for 5-10 minutes before cooking.
- Adjust cinnamon amount to taste if you prefer a milder or stronger cinnamon flavor.
