Ingredients
Cinnamon Crumble
- ¾ cup melted butter (1½ sticks)
- 1½ cups all-purpose flour
- ¾ cup brown sugar
- 1 tablespoon ground cinnamon
- ½ teaspoon ground nutmeg
Coffee Cake Batter
- ½ cup butter (softened)
- 1 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- ⅔ cup sour cream
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
- ½ teaspoon baking powder
- ½ teaspoon salt
Instructions
- Preheat Oven: Preheat your oven to 350˚F (175˚C) to prepare for baking the coffee cake.
- Make the Cinnamon Crumble: In a medium bowl, combine the melted butter, 1½ cups of flour, brown sugar, cinnamon, and nutmeg. Use a fork to mix thoroughly until the ingredients form a crumbly texture, which will add a delightful crunch to the cake.
- Prepare Cake Batter: In a large mixing bowl, use a hand mixer or a wooden spoon to cream together the softened butter and white sugar until the mixture is light and fluffy. Then, add the eggs one at a time along with the vanilla extract, mixing until fully incorporated. Fold in the sour cream to add moisture and richness.
- Combine Dry Ingredients: In a separate bowl, whisk together 1 cup of all-purpose flour, cinnamon, baking powder, and salt. Gradually add this dry ingredient mixture to the wet batter and stir just until moistened to avoid overmixing, which can make the cake tough.
- Assemble the Cake: Grease an 8-inch square baking dish. Spread half of the coffee cake batter evenly in the bottom of the dish. Sprinkle half of the cinnamon crumble mixture over the batter. Then spread the remaining cake batter over the crumble, and top with the remaining crumble to create layers of flavor and texture.
- Bake: Place the baking dish in the preheated oven and bake for 42 to 50 minutes. Insert a toothpick into the center to check doneness; it should come out clean or with a few moist crumbs when the cake is fully baked.
- Cool and Serve: Let the coffee cake cool for about 5 minutes in the pan before cutting into 16 squares. Serve warm or at room temperature alongside your favorite coffee or beverage for a delightful treat.
Notes
- Use softened butter for the cake batter to ensure proper creaming with sugar, helping to create a light texture.
- Do not overmix the batter once dry ingredients are added to keep the cake tender.
- For extra flavor, consider adding chopped nuts like pecans or walnuts to the crumble mixture.
- This cake can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
- Reheat individual slices in the microwave for about 15 seconds for a freshly baked taste.
