Ingredients
- 2 cups old-fashioned rolled oats

2 large apples, peeled, cored, and diced

1 tsp cinnamon
1/2 tsp vanilla extract
1/4 tsp salt
1/2 tsp baking powder
2 large eggs
1 tbsp melted butter or coconut oil
1/2 cup chopped walnuts or pecans (optional)
Instructions
Preheat the oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish.
- In a large mixing bowl, combine the oats, cinnamon, baking powder, and salt.
- In another bowl, whisk together the milk, eggs, maple syrup (if using), and vanilla extract. Add the melted butter or coconut oil and stir until well combined.
- Stir the diced apples into the oat mixture, then pour the wet ingredients over the dry ingredients. Mix everything together until the oats are evenly coated.
- Pour the oatmeal mixture into the prepared baking dish and spread it out evenly. If using, sprinkle the chopped nuts on top.
- Bake for 30-35 minutes, or until the top is golden brown and the oatmeal is set.
