Description

Chunky Monkey Frozen Yogurt Bark is a delicious and healthy frozen treat combining creamy Greek yogurt, rich peanut butter, fresh banana slices, melted chocolate, and crunchy roasted peanuts. This no-bake dessert is quick to prepare and perfect for a refreshing snack or guilt-free dessert.

Ingredients

Main Ingredients

  • 1 (5.3-ounce) container plain full-fat Greek yogurt
  • ½ cup smooth peanut butter
  • 1-2 tablespoons honey (to taste)
  • ¼ teaspoon salt (optional)
  • 2 large bananas, thinly sliced
  • ½ cup melted chocolate chips
  • ¼ cup roasted and salted peanuts, crushed

Instructions

  1. Prepare the yogurt mixture: In a medium-sized bowl, combine the plain Greek yogurt, smooth peanut butter, honey, and salt if using. Whisk thoroughly until the mixture is smooth and evenly blended.
  2. Spread the mixture: Line a large baking sheet with parchment paper. Using a spatula, spread the peanut butter yogurt mixture evenly onto the sheet, forming a 9×11-inch rectangle.
  3. Add toppings: Press the thinly sliced banana pieces into the yogurt mixture in six rows of eight slices each. Drizzle the melted chocolate chips over the top, then sprinkle the crushed roasted peanuts evenly.
  4. Freeze the bark: Place the baking sheet in the freezer and freeze for at least 4 hours or until the yogurt bark becomes firm and set.
  5. Serve and store: Once frozen, break the bark into pieces. Store the pieces in a freezer-safe bag for up to one week. Before eating, allow the bark to thaw at room temperature for about 5 minutes for the best texture. Avoid leaving it out for more than 15 minutes to prevent melting.

Notes

  • Use full-fat Greek yogurt for the creamiest texture and best flavor.
  • Honey amount can be adjusted based on your preferred sweetness level.
  • This bark is best stored in the freezer and enjoyed cold.
  • For a nut-free version, substitute peanut butter and peanuts with sunflower seed butter and seeds.
  • Allow the bark to thaw slightly before eating to enhance the flavor and texture.
