Ingredients
Chocolate Pudding Ingredients
- 1 cup 70% dark chocolate (150 grams)
- ½ tablespoon coconut oil
- 2 teaspoons cocoa powder
- 2 tablespoons maple syrup (or more as needed)
- Pinch of salt
- 1 pound silken tofu (16 ounce block, liquid removed and blotted with paper towels if needed)
Instructions
- Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate and coconut oil. Microwave on high power in 20-second increments, stirring well between each interval until the chocolate is fully melted and smooth.
- Blend Ingredients: Transfer the melted chocolate to a high-speed blender. Add the cocoa powder, maple syrup, pinch of salt, and silken tofu. Blend the mixture until it becomes smooth, creamy, and fully combined.
- Serve or Chill: Spoon the chocolate tofu pudding into ramekins or serving glasses. Serve immediately for a soft texture, or refrigerate to allow it to set for a firmer pudding consistency. Chill for at least 1 hour if desired.
Notes
- Use silken tofu for the best creamy texture.
- Adjust the maple syrup to your preferred sweetness level.
- Ensure to remove excess moisture from tofu for thicker pudding.
- The pudding can be refrigerated for up to 3 days.
- Optionally garnish with fresh berries, nuts, or a dollop of coconut whipped cream.
