Description

A delightful homemade rocky road recipe combining rich dark and milk chocolates with crunchy Crunchie bars, chewy marshmallows, digestive biscuits, and sweet raisins, all set into a luscious, no-bake traybake perfect for sharing.


Ingredients

Chocolate Mixture

  • 150g salted butter plus extra for the tin
  • 3 tbsp golden syrup
  • 200g dark chocolate
  • 200g milk chocolate

Add-ins

  • 2 (32g each) Crunchie bars
  • A handful (about 25g) mini marshmallows
  • 200g digestive biscuits, broken into pieces
  • A handful (about 30g) raisins


Instructions

  1. Melt the Chocolate Mixture: Heat the butter, golden syrup, dark chocolate, and milk chocolate together in a small pan over gentle heat, stirring until everything is melted and combined smoothly. Once melted, transfer the mixture into a large bowl and allow it to cool for 10 minutes to prevent melting the mix-ins.
  2. Prepare the Tin and Mix-ins: Lightly butter a 20cm brownie tin and line it with baking parchment for easy removal. Place the Crunchie bars into a bowl and crush them into small pieces using the end of a rolling pin. Add the crushed Crunchie bars, mini marshmallows, broken digestive biscuits, and raisins into the cooled chocolate mixture. Stir well to evenly combine all ingredients.
  3. Set and Chill: Pour the mixture into the prepared tin and level the top with a spatula. Chill in the refrigerator for at least a few hours until fully set and firm. Once set, cut into 12 squares to serve and enjoy.
