Ingredients

Tartlet Shells

  • 250 gr (1 2/3 cup) Plain / All-Purpose Flour
  • 50 gr (1/2 cup) Icing Sugar (or powdered sugar)
  • 1 pinch Table Salt
  • 120 gr (1/2 cup) Unsalted Butter (very cold, cubed)
  • 1 Egg

Orange Curd Filling

  • 4 Egg Yolks
  • 50 gr (4 tablespoons) Caster Sugar (or fine white granulated sugar)
  • 120 ml (1/2 cup) Fresh Orange Juice (about 3 oranges)
  • 1 Orange Zest (grated)
  • 1 tablespoon Cornstarch
  • 75 gr (5 tablespoons) Unsalted Butter (cubed)

Chocolate Ganache

  • 70 gr (2.5 oz) Dark Cooking Chocolate (finely chopped)
  • 70 ml (1/4 cup + 2 teaspoons) Heavy / Thickened Cream


Instructions

  1. Prepare Tartlet Shells: In a food processor, combine the flour, icing sugar, and salt. Add the very cold, cubed butter and pulse until the mixture resembles fine crumbs. Incorporate the egg slowly, or pre-whisked, until the dough just begins to come together.
  2. Chill and Roll Dough: Shape the dough into a ball, sandwich between two sheets of baking paper, and roll out into a 3mm (1/8 inch) thick disk. Refrigerate the dough disk for at least 1 hour, up to 24 hours to rest.
  3. Cut and Fit Tartlet Shells: Remove the baking paper, cut out rounds with a fluted or round cookie cutter matching your muffin pan size. Gently press each pastry round into muffin pan cups, ensuring no air bubbles remain. Prick the base with a fork and chill again for at least 1 hour.
  4. Blind Bake Tartlet Shells: Preheat oven to 160°C (325°F). Place the muffin pan in the freezer while heating. Line each shell with baking paper, fill with baking weights and bake for 15 minutes. Remove weights and paper, then bake another 15 minutes until shells are golden and dry. Cool completely.
  5. Make Orange Curd Filling: In a small saucepan, whisk together orange juice, zest, egg yolks, sugar, and cornstarch over low heat. Stir continuously until sugar dissolves and mixture thickens slightly (3-5 minutes). Add cubed butter gradually, stirring until fully melted and mixture thickens further. Strain through a fine mesh sieve to remove lumps.
  6. Fill Tartlet Shells: Pour warm orange curd into cooled shells, gently tap to eliminate air bubbles, then refrigerate for at least 2 hours or overnight to set.
  7. Prepare Chocolate Ganache: Place chopped chocolate in a heatproof bowl. Heat cream until simmering, pour half over the chocolate, and let sit for 2-3 minutes. Stir gently from the center outward until smooth. Add remaining cream (reheated if needed) and stir again to achieve a shiny, smooth ganache.
  8. Decorate Tartlets: Pipe or drizzle ganache over set orange curd in tartlets. Tap gently to spread or smooth with an offset spatula. Refrigerate for at least 1 hour to set ganache.
  9. Finish and Serve: Garnish with dehydrated orange slices, fresh orange zest, or chocolate curls. For best texture, allow tartlets to rest at room temperature for 30 minutes before serving.
