Ingredients

Egg Mixture

  • 4 large egg yolks

  • 2 tbsp Grand Marnier
  • 2 tsp vanilla extract
  • 2 tsp orange zest


Instructions

  1. Whisk the egg yolks and sugar: In a medium bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and fluffy, about 2 minutes. Set aside.
  2. Heat cream and salt: In a saucepan over medium heat, warm 1 cup of heavy cream with the sea salt, stirring occasionally. Heat until the mixture reaches 160°F and small bubbles form around the edges.
  3. Temper the eggs: Slowly pour the hot cream mixture into the egg yolks while whisking constantly to prevent curdling. Return this combined mixture to the saucepan and gently heat on low, stirring frequently until it reaches 160°F again.
  4. Add chocolate and flavorings: Remove from heat and stir in the chopped dark chocolate, Grand Marnier, vanilla extract, and orange zest until the chocolate is completely melted and the mixture is smooth. Cover and chill, stirring every 10 minutes for about 30 minutes until cool.
  5. Whip remaining cream and fold: Whip the remaining 1 1/2 cups of heavy cream to stiff peaks. Gently fold the whipped cream into the chocolate mixture until combined.
  6. Chill and serve: Spoon the mousse into serving cups and chill in the refrigerator for 2 hours. Before serving, top with additional whipped cream and a sprinkle of orange zest for garnish.
