Description

This rich and creamy Chocolate Cornstarch Pudding is a delightful homemade dessert that’s simple to prepare and perfect for satisfying chocolate cravings. Made with basic pantry staples like cocoa powder, sugar, and cornstarch, this pudding boasts a smooth, velvety texture and a deep chocolate flavor, ideal for serving chilled or at room temperature.

Ingredients

Dry Ingredients

  • 1/2 cup granulated sugar
  • 3 tablespoons unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt

Wet Ingredients

  • 2 3/4 cups milk
  • 2 tablespoons butter, room temperature
  • 1 teaspoon vanilla extract

Instructions

  1. Combine Dry Ingredients: In a large saucepan over medium-low heat, whisk together the sugar, unsweetened cocoa powder, cornstarch, and salt until well combined.
  2. Add Milk Gradually: Slowly stir in the milk to the dry ingredients mixture, ensuring there are no lumps and the mixture is smooth.
  3. Cook Until Boiling: Bring the mixture to a boil over medium heat, which should take about 7 to 8 minutes. Stir occasionally with a whisk to prevent lumps.
  4. Thicken the Pudding: Reduce the heat to low and continuously stir the pudding, scraping the bottom and sides of the saucepan to prevent burning. Continue this for 1 to 2 minutes until the pudding thickly coats the back of a metal spoon.
  5. Finish with Butter and Vanilla: Remove the saucepan from heat and stir in the butter and vanilla extract, mixing thoroughly to incorporate the richness and aroma.
  6. Cool the Pudding: Allow the pudding to cool to room temperature. Then transfer it into a bowl and press plastic wrap directly onto the pudding surface to prevent a skin from forming.
  7. Refrigerate: Chill the pudding in the refrigerator for 1 to 2 hours until set and cold.
  8. Serve: Serve the pudding chilled or at room temperature. Enjoy this smooth, chocolatey treat as a satisfying dessert!

Notes

  • Pressing plastic wrap directly on the pudding surface prevents a skin from forming while chilling.
  • For a richer flavor, use whole milk or substitute part of the milk with cream.
  • Adjust the sweetness by adding more or less sugar according to your preference.
  • Stir continuously while thickening to avoid lumps and burning.
  • Can be garnished with whipped cream or fresh berries if desired.
