Chicken
- 1.4 lb boneless skinless chicken thighs
- 1/2 teaspoon chili powder (or more to taste)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Peaches & Glaze
- 2 medium yellow peaches, washed, cored, and sliced
- 3 tablespoons honey (or more to taste)
- 1/2 lemon, freshly squeezed (or more to taste)
- 2 tablespoons butter
- Fresh thyme, for garnish
Instructions
- Season the Chicken: Pat the chicken thighs dry and season them evenly with chili powder, Italian seasoning, salt, and pepper.
- Heat the Skillet: Place a 12-inch cast iron skillet or a similar high-sided pan over medium heat and allow it to heat for 2 minutes to ensure even cooking.
- Sear the Chicken: Add 2 tablespoons of olive oil to the hot skillet. Place the chicken thighs in the pan and cook undisturbed over medium heat for 5 minutes to develop a good sear.
- Cook Through: Flip the chicken thighs, reduce heat to low-medium, and continue cooking for another 5 minutes or until the chicken is cooked through. Remove the chicken from the skillet and set aside.
- Sauté the Peaches: In the same skillet, add the sliced peaches over medium heat. Cook gently without overcooking for about 5 minutes until slightly softened and heated through.
- Prepare the Glaze: Add honey, freshly squeezed lemon juice, and butter to the peaches in the skillet. Stir gently to combine and create a glossy glaze.
- Combine and Reheat: Nestle the cooked chicken thighs back into the skillet among the peaches, and briefly reheat everything together.
- Garnish and Serve: Remove the skillet from heat, sprinkle fresh thyme over the chicken and peaches, and serve immediately for a flavorful and appealing meal.

- Using a cast iron skillet helps achieve a better sear and even heat distribution for the chicken.
- You can adjust the amount of chili powder depending on your preferred spice level.
