Ingredients
For the Bread:
- 2 Cups all-purpose flour
- 1 ½ Teaspoons baking powder
- ½ Teaspoon kosher salt
- 1 Cup granulated sugar
- 1 Stick unsalted butter (½ Cup, softened)
- 2 large eggs (at room temperature)
- 2 Teaspoons vanilla extract
- 1 Teaspoon almond extract
- ½ Cup whole milk (at room temperature)
- 3 Tablespoons maraschino cherry juice
- 1 Cup maraschino cherries (chopped, drained and stems removed, reserve juice for glaze)

- 1 ½ Cups powdered sugar (sifted)
- ¼ Cup heavy cream
- 2 Tablespoons maraschino cherry juice (reserved from jar, more if needed)
- ¼ Teaspoon almond extract
Instructions
- Preheat the Oven: Preheat your oven to 350°F to prepare for baking the cherry bread.
- Prepare the Loaf Pan: Lightly coat a 9 x 5-inch loaf pan with nonstick cooking spray, then line it with parchment paper leaving ends overhanging for easy bread removal and cleanup.
- Mix Dry Ingredients: In a medium bowl, whisk together all-purpose flour, baking powder, and kosher salt until evenly combined. Set aside.
- Cream Butter and Sugar: Using a mixer on medium speed, cream softened unsalted butter and granulated sugar in a large bowl for 2 to 3 minutes until light and fluffy.
- Add Eggs: Incorporate eggs one at a time into the creamed mixture, mixing well after each addition. Scrape sides of the bowl as necessary to ensure even mixing.
- Add Extracts: Mix in vanilla and almond extracts until the batter is smooth and fragrant.
- Combine Dry Ingredients and Liquids: Reduce mixer speed to low. Add half the dry mixture and mix until just combined. Pour in all whole milk and 3 tablespoons of cherry juice, mixing until incorporated.
- Add Remaining Dry Ingredients: Add the rest of the dry mixture and gently mix until the batter is smooth with no flour streaks. Avoid overmixing to keep the bread tender.
- Fold in Chopped Cherries: Gently fold in the chopped maraschino cherries using a rubber spatula to distribute them evenly throughout the batter.
- Fill and Smooth Batter: Spoon the batter into the prepared loaf pan and smooth the top with a spatula. Tap the pan gently on the counter to release any large air bubbles.
- Bake the Bread: Bake on the center rack for 55 to 60 minutes, or until the top is golden and a toothpick inserted comes out mostly clean with a few moist crumbs but no wet batter.
- Cool Bread: Remove from oven and place the pan on a wire rack. Let the bread cool in the pan for 15 minutes before lifting it out by the parchment paper and transferring it to the rack to cool completely.
- Prepare the Glaze: Whisk together sifted powdered sugar, heavy cream, 2 tablespoons reserved cherry juice, and almond extract until smooth, glossy, and pourable but not too thin. Adjust consistency by adding more cherry juice or powdered sugar as needed.
- Glaze the Bread: Pour or drizzle the glaze generously over the cooled bread, allowing it to drip down the sides. Let the glaze set for 15 minutes before slicing and serving.
