Description
This Cake Mix Coffee Cake is a simple and delicious dessert that combines the convenience of a boxed cake mix with a homemade cinnamon pecan streusel topping. Perfect for breakfast, brunch, or an afternoon treat, this moist and tender cake has a rich sour cream base and is topped with a sweet, crunchy streusel and optional vanilla glaze.
Ingredients
Cake Batter
- 1 Box yellow cake mix
- 3 eggs
- 1 teaspoon vanilla extract
- 1 ½ cups sour cream
- ⅔ cup all-purpose flour
Streusel Topping
- ¼ cup butter, melted
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup brown sugar
- 1 cup pecans, chopped
Glaze (Optional)
- 1 ½ cups powdered sugar
- 2 tablespoons milk
- ¼ teaspoon vanilla extract
Instructions
- Preheat the oven: Set your oven to 350°F (175°C) to warm up while you prepare the batters and toppings.
- Prepare the baking pan: Grease a 9 x 13-inch baking pan and line it with parchment paper for easy removal of the cake.
- Make the cake batter: In a large bowl, combine the yellow cake mix, eggs, vanilla extract, and sour cream. Use a wooden spoon or whisk to mix until fully combined and smooth. Set the batter aside.
- Mix the streusel topping: In a medium bowl, mix together the all-purpose flour, melted butter, salt, ground cinnamon, brown sugar, and chopped pecans using a fork or pastry cutter until well combined and crumbly.
- Assemble the cake layers: Spread half of the cake batter evenly into the prepared pan. Then sprinkle half of the streusel topping evenly over the batter.
- Layer the remaining batter and streusel: Spread the remaining cake batter over the streusel layer, smoothing it out. Top this with the remaining streusel mixture to finish the layering.
- Bake the cake: Place the pan in the preheated oven and bake for 45 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cake: Remove the cake from the oven and allow it to cool in the pan for about 45 minutes before serving.
- Prepare the optional glaze: While the cake is cooling, whisk together powdered sugar, milk, and vanilla extract in a small bowl until smooth.
- Serve: Drizzle the glaze evenly over the cooled cake if desired, slice, and enjoy.
Notes
- For easier cleanup, lining the pan with parchment paper helps lift the cake out smoothly.
- If you prefer less sweetness, reduce the brown sugar in the streusel by ¼ cup.
- Chop pecans to your preferred size; toasting them lightly enhances their flavor.
- The glaze is optional but adds a lovely vanilla sweetness to the finished cake.
- Ensure the cake is completely cooled before glazing to prevent the glaze from melting and running off.
