Ingredients
Butter
- 1 1/2 sticks (12 tablespoons) cold salted butter, divided
- 4 tablespoons shredded/grated butter for batter
- Additional butter for serving (optional)
Dry Ingredients
- 1 cup whole wheat pastry flour (or all-purpose flour)
- 1/2 cup old fashioned oats
- 1/2 cup light or dark brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon kosher salt
Wet Ingredients
- 1 cup milk
- 1 tablespoon vanilla extract
- 2 tablespoons maple syrup (or additional brown sugar)
Fruit
- 6-7 cups sliced strawberries
Thickener
- 2 teaspoons arrowroot powder (or cornstarch)
Instructions
- Preheat and Melt Butter: Preheat your oven to 375°F (190°C). Place 8 tablespoons of cold salted butter into a 9×13 inch baking dish and put it into the oven to melt completely, about 10 minutes. This melted butter will form the flavorful base layer of the cobbler.
- Prepare the Batter: In a mixing bowl, stir together the whole wheat pastry flour, oats, 1/2 cup brown sugar, baking powder, and kosher salt until evenly combined. Then mix in 4 tablespoons of the shredded or grated butter. Add the milk and vanilla extract, stirring gently until just combined to avoid overmixing, which keeps the batter tender.
- Prepare the Strawberry Filling: In another bowl, toss the sliced strawberries with maple syrup and arrowroot powder or cornstarch. This mixture helps thicken the fruit juices as the cobbler bakes, ensuring a luscious filling without being runny.
- Assemble the Cobbler: Remove the baking dish with melted butter from the oven. Layer about three-quarters of the strawberry mixture evenly over the melted butter. Carefully pour the batter right over these strawberries without stirring. Finally, layer the remaining strawberries on top of the batter to create beautifully distinct layers.
- Bake: Place the assembled cobbler in the oven and bake for 45-50 minutes. Bake until the center is set and the edges are beginning to brown, signaling that the crust is perfectly cooked and the filling is bubbling.
- Serve: Allow the cobbler to cool slightly. Serve warm or at room temperature topped with vanilla ice cream and a drizzle of maple butter, if desired, to create a rich and indulgent dessert experience.
Notes
- Using whole wheat pastry flour gives a nuttier flavor and added fiber but all-purpose flour can be used for a lighter texture.
- Make sure not to overmix the batter to keep the cobbler crumb tender.
- If arrowroot powder is unavailable, cornstarch is a perfect substitute to thicken the strawberries.
- For a vegan option, substitute butter and milk with plant-based alternatives.
- This cobbler is best enjoyed the day it’s made but can be reheated gently for leftovers.
