- 2 slices sourdough bread
- 1 tablespoon butter (divided)

- 2 tablespoons Garlic & Herb Boursin cheese

- ¼ cup cherry tomatoes (quartered)
- Drizzle of balsamic glaze
- Salt and pepper (to taste)
Instructions
- Prepare the skillet: Heat a skillet over medium to medium-high heat. Add ½ tablespoon of butter and spread it around the skillet until it melts, ensuring an even coating for toasting the bread.
- Toast the sourdough bread: Place the slices of sourdough bread in the skillet. Let each side brown and become toasty; first cook for 2-3 minutes on one side, then flip and toast the other side for 1-2 minutes. Remove the toasted bread from the skillet and set aside.
- Cook the eggs: Reduce the skillet heat to low and add the remaining ½ tablespoon of butter. Crack the eggs directly into the skillet and cook them to your preferred doneness, whether that’s sunny side up, over easy, or fully cooked.
- Assemble the toast: Spread 1 tablespoon of Garlic & Herb Boursin cheese on the top side of each toasted sourdough slice. Place the cooked eggs on top of the cheese layer.
