A moist and flavorful Blueberry Banana Bread that combines ripe bananas and fresh blueberries for a delicious twist on classic banana bread. Perfect as a breakfast treat or an afternoon snack.
Ingredients
Wet Ingredients
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 very ripe bananas
Dry Ingredients
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Add-ins
- 1 cup fresh blueberries
Instructions
- Preheat oven: Preheat your oven to 350°F (175°C) to ensure it’s at the right temperature for baking the bread evenly.
- Cream butter and sugar: In a large mixing bowl, combine the softened butter, granulated sugar, eggs, and vanilla extract. Use an electric mixer to cream the ingredients together until the mixture is smooth and fluffy.
- Add bananas: Mash the ripe bananas and add them to the creamed mixture. Continue mixing with the electric mixer until the bananas are fully incorporated and no large lumps remain.
- Combine dry ingredients: In the same bowl, add the all-purpose flour, baking soda, baking powder, and salt. Use a rubber spatula to gently fold and stir until all the dry ingredients are fully combined with the wet mixture.
- Add blueberries: Gently fold in the fresh blueberries, taking care not to crush them to keep them intact throughout the bread.
- Prepare pan and pour batter: Grease a 9 x 5 inch loaf pan thoroughly, then pour the batter evenly into the pan, smoothing the top with a spatula.
- Bake: Place the loaf pan in the preheated oven and bake for 60-65 minutes. Test doneness by inserting a toothpick into the center; it should come out clean.
- Cool in pan: Remove the bread from the oven and let it cool in the pan for about 10 minutes to firm up slightly.
- Remove and cool on rack: Carefully take the loaf out of the pan and place it on a wire rack to cool completely or until only slightly warm before slicing.
- Serve: Slice and enjoy your delicious blueberry banana bread fresh as a snack or breakfast treat.
Notes
- Use very ripe bananas for the best sweetness and moisture.
- Folding in blueberries gently helps prevent them from breaking and coloring the batter too much.
- Store leftover bread in an airtight container at room temperature for up to 3 days or freeze for longer storage.
- Check your bread 5 minutes before the baking time ends as oven temperatures may vary.
- You can substitute fresh blueberries with frozen ones; just do not thaw them before adding.
