Description

A moist and flavorful Blueberry Banana Bread that combines ripe bananas and fresh blueberries for a delicious twist on classic banana bread. Perfect as a breakfast treat or an afternoon snack.

Ingredients

Wet Ingredients

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 very ripe bananas

Dry Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Add-ins

  • 1 cup fresh blueberries

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) to ensure it’s at the right temperature for baking the bread evenly.
  2. Cream butter and sugar: In a large mixing bowl, combine the softened butter, granulated sugar, eggs, and vanilla extract. Use an electric mixer to cream the ingredients together until the mixture is smooth and fluffy.
  3. Add bananas: Mash the ripe bananas and add them to the creamed mixture. Continue mixing with the electric mixer until the bananas are fully incorporated and no large lumps remain.
  4. Combine dry ingredients: In the same bowl, add the all-purpose flour, baking soda, baking powder, and salt. Use a rubber spatula to gently fold and stir until all the dry ingredients are fully combined with the wet mixture.
  5. Add blueberries: Gently fold in the fresh blueberries, taking care not to crush them to keep them intact throughout the bread.
  6. Prepare pan and pour batter: Grease a 9 x 5 inch loaf pan thoroughly, then pour the batter evenly into the pan, smoothing the top with a spatula.
  7. Bake: Place the loaf pan in the preheated oven and bake for 60-65 minutes. Test doneness by inserting a toothpick into the center; it should come out clean.
  8. Cool in pan: Remove the bread from the oven and let it cool in the pan for about 10 minutes to firm up slightly.
  9. Remove and cool on rack: Carefully take the loaf out of the pan and place it on a wire rack to cool completely or until only slightly warm before slicing.
  10. Serve: Slice and enjoy your delicious blueberry banana bread fresh as a snack or breakfast treat.

Notes

  • Use very ripe bananas for the best sweetness and moisture.
  • Folding in blueberries gently helps prevent them from breaking and coloring the batter too much.
  • Store leftover bread in an airtight container at room temperature for up to 3 days or freeze for longer storage.
  • Check your bread 5 minutes before the baking time ends as oven temperatures may vary.
  • You can substitute fresh blueberries with frozen ones; just do not thaw them before adding.
