Ingredients

Blackberry Mixture

  • 1 quart fresh or frozen (loose-pack) blackberries
  • 1 cup sugar

Dumplings

  • 1-1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 2/3 cup 2% milk

To Serve (Optional)

  • Cream or whipped cream


Instructions

  1. Prepare the Blackberry Mixture: In a Dutch oven, combine the blackberries, 1 cup of sugar, 1/4 teaspoon salt, and lemon extract. Bring the mixture to a boil over medium-high heat, then reduce the heat and let it simmer gently for 5 minutes to meld the flavors and release the berry juices.
  2. Make the Dumpling Batter: While the blackberry mixture simmers, in a mixing bowl combine the flour, baking powder, nutmeg, remaining 1 tablespoon sugar, and 1/2 teaspoon salt. Pour in the 2% milk and stir just until the ingredients come together into a very thick dough. Take care not to overmix to keep the dumplings tender.
  3. Cook the Dumplings: Drop the dough by tablespoonfuls into six mounds evenly spaced atop the hot blackberry mixture in the Dutch oven. Cover the pot tightly and allow the dumplings to steam and cook through over low heat for 15 minutes. Check doneness by inserting a toothpick; it should come out clean when the dumplings are cooked.
  4. Serve: Spoon the blackberry dumplings into individual serving dishes, drizzling some of the cooking juices over. Serve warm with cream or whipped cream if desired for added richness and creaminess.
