Ingredients

1 can (15 oz) black beans, drained and rinsed

1 cup walnuts, finely chopped

1 small onion, finely chopped

1 clove garlic, minced

1/4 cup breadcrumbs (use gluten-free if needed)

1 tablespoon soy sauce or tamari

1 tablespoon nutritional yeast

1 tablespoon ground flaxseed

1 tablespoon olive oil (for cooking)

Salt and pepper to taste

For the Saucy Sweet Onions:

2 large onions, thinly sliced

1 tablespoon olive oil

1 tablespoon balsamic vinegar

1 tablespoon maple syrup

Salt and pepper to taste


Instructions

  • In a large bowl, mash the black beans with a fork or potato masher until mostly mashed but still slightly chunky.

  • Add the chopped walnuts, chopped onion, garlic, breadcrumbs, soy sauce, nutritional yeast, and ground flaxseed. Stir to combine. Season with salt and pepper.

  • Form the mixture into 4 equal-sized patties.

  • Heat a large skillet over medium heat and add olive oil. Cook the patties for 4-5 minutes on each side until golden brown and crispy.

  • While the patties cook, prepare the saucy sweet onions: Heat olive oil in a separate pan and sauté the onions for 10-12 minutes until soft and caramelized.

  • Add balsamic vinegar and maple syrup to the onions, cooking for 2-3 minutes until the sauce thickens slightly. Season with salt and pepper.

  • Assemble the burgers by placing a patty on a bun and topping with the sweet onions.

Notes

  • For extra flavor, top with avocado, lettuce, tomato, or your favorite burger toppings.

  • These burgers can be made ahead and stored in the fridge for up to 3 days.

  • Freeze uncooked patties for future use—simply cook from frozen, adding a few extra minutes to the cooking time.
