Ingredients
1 can (15 oz) black beans, drained and rinsed
1 cup walnuts, finely chopped
1 small onion, finely chopped
1 clove garlic, minced
1/4 cup breadcrumbs (use gluten-free if needed)
1 tablespoon soy sauce or tamari
1 tablespoon nutritional yeast
1 tablespoon ground flaxseed
1 tablespoon olive oil (for cooking)
Salt and pepper to taste
For the Saucy Sweet Onions:
2 large onions, thinly sliced
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 tablespoon maple syrup
Salt and pepper to taste

In a large bowl, mash the black beans with a fork or potato masher until mostly mashed but still slightly chunky.

Add the chopped walnuts, chopped onion, garlic, breadcrumbs, soy sauce, nutritional yeast, and ground flaxseed. Stir to combine. Season with salt and pepper.

Form the mixture into 4 equal-sized patties.

Heat a large skillet over medium heat and add olive oil. Cook the patties for 4-5 minutes on each side until golden brown and crispy.

While the patties cook, prepare the saucy sweet onions: Heat olive oil in a separate pan and sauté the onions for 10-12 minutes until soft and caramelized.
