Ingredients

Brownie Batter

  • 1 cup salted butter (melted and slightly cooled)
  • 3 large eggs (room temperature)
  • 2 tsp pure vanilla extract
  • ⅔ cup granulated sugar
  • 1 cup brown sugar (packed)
  • ¾ cup unsweetened cocoa powder

Biscoff Layer & Topping

  • 2/3 cup Biscoff spread (or other cookie butter, well chilled plus more for topping)

Instructions

  1. Prep: Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan with baking spray to prevent sticking.
  2. Mix Butter and Sugars: In a large bowl, whisk together the melted salted butter with both the granulated and brown sugars until the mixture is smooth and well combined.
  3. Add Eggs and Vanilla: Crack in the eggs and add vanilla extract, whisking thoroughly until the batter becomes light and fluffy, which incorporates air for a tender texture.
