Ingredients
Brownie Batter
- 1 cup salted butter (melted and slightly cooled)
- 3 large eggs (room temperature)
- 2 tsp pure vanilla extract
- ⅔ cup granulated sugar
- 1 cup brown sugar (packed)
- ¾ cup unsweetened cocoa powder
- 1 cup all-purpose flour
- ½ tsp espresso powder (optional; alternatively, 1 tbsp strong coffee)
- ½ teaspoon salt
Biscoff Layer & Topping
- 2/3 cup Biscoff spread (or other cookie butter, well chilled plus more for topping)
- Crumbled Biscoff cookies (for topping)
Instructions
- Prep: Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan with baking spray to prevent sticking.
- Mix Butter and Sugars: In a large bowl, whisk together the melted salted butter with both the granulated and brown sugars until the mixture is smooth and well combined.
- Add Eggs and Vanilla: Crack in the eggs and add vanilla extract, whisking thoroughly until the batter becomes light and fluffy, which incorporates air for a tender texture.
- Combine Dry Ingredients: Sift cocoa powder, all-purpose flour, espresso powder (or coffee), and salt into the batter. Using a rubber spatula, gently fold these ingredients until just combined to avoid overmixing.
- Layer Batter and Biscoff: Pour half of the brownie batter into the prepared pan, smoothing it evenly to the edges. Spoon dollops of chilled Biscoff spread evenly over this batter layer.
- Top Batter and Bake: Carefully spoon the remaining batter over the Biscoff spread and gently smooth the top. Optionally add extra spoonfuls of Biscoff on top. Bake in the preheated oven for 30-35 minutes, or check at 25 minutes if you prefer gooey brownies and remove when the center is just set.
- Cool: Remove the brownies from the oven and cool in the pan for 20 minutes. Then transfer to a wire rack to cool completely, allowing them to set.
- Drizzle and Garnish: Melt extra Biscoff spread in the microwave for 20-30 seconds and stir until smooth. Drizzle over the cooled brownies and sprinkle with crumbled Biscoff cookies for a crunchy topping.
Notes
- For a stronger coffee flavor, espresso powder can be replaced with a tablespoon of brewed strong coffee.
- Use well-chilled Biscoff spread to make it easier to spoon and layer.
- Check brownies early if you prefer them extra fudgy rather than cakey.
- Allow brownies to cool completely before drizzling and serving to avoid melting the topping.
- Store brownies in an airtight container at room temperature for up to 3 days or refrigerate to extend freshness.
