Instructions
- Peel and prepare apples: Peel, core, and dice the apples. Add the diced apples to a large saucepan while slicing, and drizzle with lemon juice to prevent browning.

- Thicken the mixture: Return the apples to the saucepan. Add the butter, whisked egg, light brown sugar, and cinnamon. Stir to combine and cook over low heat, stirring frequently to prevent the eggs from scrambling, until the mixture thickens.
- Strain the curd: Strain the thickened apple mixture through a fine mesh sieve to remove lumps and achieve a smooth texture.
- Cool and store: Let the apple curd cool completely. Store it in an airtight container in the refrigerator for up to one week.
