Instructions
- Make the Triple Berry Filling: Place blueberries, raspberries, and huckleberries into a saucepan with sugar over medium-high heat. Stir and gently crush the berries as they cook, bringing the mixture to a rolling boil. Add the corn starch and stir well. Let the compote bubble for about a minute until thickened, then remove from heat and allow it to cool completely.
- Prepare Puff Pastry for Tarts: Roll out the puff pastry sheet into a large rectangle on a clean surface. Cut it into 8 equal-sized smaller rectangles. On one half of each rectangle, spoon about 2 tablespoons of the cooled berry compote, spreading evenly but leaving edges free for sealing.
- Seal the Pastries: Fold the other half of the puff pastry over the filling to create a sealed rectangle. Use a fork to press down and crimp the edges firmly, then poke a few holes in the top of each tart with the fork to allow steam to escape during cooking.
