Ingredients
Cupcake Batter
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/3 cup unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1 large egg
- 1/4 teaspoon vanilla extract
- 1/4 cup milk
- 1/4 cup fresh blueberries (or frozen)
Blueberry Frosting
- 1/2 cup unsalted butter, room temperature
- 1 cup powdered sugar
- 4 tablespoons pureed blueberries
Instructions
- Prepare the liners: Line your baking tray with cupcake liners suitable for your muffin pan or silicone molds, or alternatively, spray them lightly with cooking spray.
- Sift dry ingredients: In a large bowl, sift together the flour, baking powder, and salt and set aside.
- Cream butter and sugar: In a separate bowl, whisk the unsalted butter and granulated sugar until light and creamy. Add the egg and vanilla extract and mix well to combine.
- Combine wet and dry ingredients: Alternate adding the sifted flour mixture and milk in batches to the butter mixture, gently folding until just combined. Fold in the fresh blueberries carefully to distribute evenly.
- Air fry the cupcakes: Fill each cupcake liner about 3/4 full with batter. Place in the air fryer and bake at 320°F (160°C) for 10 to 12 minutes, or until a toothpick inserted in the center comes out clean. Allow cupcakes to cool completely on a wire rack before frosting.
- Prepare the frosting: In a large bowl, cream the unsalted butter for 1-2 minutes until light and fluffy. Gradually add powdered sugar, mixing continuously. Once fully combined, add pureed blueberries and mix until smooth and evenly colored.
- Decorate and serve: Frost the cooled cupcakes with the blueberry buttercream as desired. Plate and enjoy your delicious air fryer blueberry cupcakes!
Notes
- Ensure butter is at room temperature for easier mixing and smoother batter and frosting.
- You can use frozen blueberries if fresh are not available, just thaw and drain excess moisture before adding.
- Do not overmix the batter to keep cupcakes light and tender.
- Check cupcakes at 10 minutes to avoid overcooking, as air fryer models may vary.
- For a more intense blueberry flavor, add a teaspoon of lemon zest to the batter or frosting.
