Ingredients

  • 1 lb (450g) ground beef
  • 1 tbsp olive oil (if needed)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 oz (225g) cremini or white mushrooms, sliced
  • 1 tsp Worcestershire sauce
  • 1 tsp smoked paprika
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • 2 cups beef broth
  • 1 cup whole milk or heavy cream
  • 2 cups egg noodles
  • ½ cup sour cream
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Cook the beef – In a large skillet or deep pan, cook ground beef over medium heat until browned. Drain excess grease if necessary.
  2. Sauté the aromatics – Add diced onion and garlic, cooking until softened, about 2 minutes.
  3. Add mushrooms & seasoning – Stir in mushrooms, Worcestershire sauce, paprika, salt, and pepper. Cook for another 3-4 minutes until mushrooms are tender.
  4. Simmer with noodles – Pour in beef broth and milk, then add the egg noodles. Stir, bring to a simmer, and cover. Cook for 10-12 minutes, stirring occasionally, until noodles are tender.
  5. Make it creamy – Reduce heat to low and stir in sour cream until smooth and fully incorporated. Adjust seasoning if needed.
  6. Serve & garnish – Sprinkle with fresh parsley and serve warm.

  • Swap egg noodles for rotini or fettuccine if preferred.
  • Add a splash of white wine when cooking mushrooms for extra depth of flavor.
