Ingredients
- 2 medium zucchinis, grated
1/2 small onion, finely chopped (optional)
1 large egg
1/4 cup all-purpose flour (or gluten-free flour)
1/4 cup grated Parmesan cheese (optional)
1/2 tsp garlic powder
1/2 tsp dried oregano
Salt and pepper, to taste
2 tbsp olive oil (or vegetable oil) for frying
Fresh herbs like parsley or dill for garnish (optional)
Instructions
Grate the zucchini and squeeze out excess moisture using a clean towel or paper towels.
- In a large bowl, combine the grated zucchini, chopped onion (if using), egg, flour, Parmesan cheese (if using), garlic powder, oregano, salt, and pepper. Stir until combined. If the mixture is too wet, add more flour.
- Heat the olive oil in a large skillet over medium heat. Spoon heaping tablespoons of the zucchini mixture into the skillet and flatten them slightly with the back of the spoon. Cook for 3-4 minutes per side until golden brown and crispy.
- Transfer the fritters to a paper towel-lined plate to drain any excess oil.
- Serve warm, garnished with fresh herbs and a dollop of sour cream or yogurt, and a squeeze of lemon, if desired.
Notes
- For a vegan version, use a flax egg (1 tbsp flaxseed meal + 3 tbsp water) and a plant-based yogurt alternative.
- For a spicier version, add cayenne pepper or red pepper flakes to the batter.
