Description
Zucchini Bites are flavorful, bite-sized snacks or appetizers made with fresh zucchini, cheese, and herbs, baked or air-fried until golden and crispy. They’re a healthy and tasty way to enjoy this versatile vegetable.
Ingredients
- 2 medium zucchinis, sliced into 1/4-inch rounds
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1/4 cup almond flour or breadcrumbs
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
1 large egg, beaten
Optional: fresh parsley or basil for garnish 
Instructions
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a shallow bowl, mix Parmesan, mozzarella, almond flour, garlic powder, Italian seasoning, salt, and pepper.
 - Dip each zucchini slice into the beaten egg, then coat with the cheese mixture, pressing lightly to adhere.
 - Place coated zucchini slices on the prepared baking sheet.
 - Bake for 15-20 minutes, flipping halfway through, until golden and crispy.
 - Garnish with fresh herbs if desired and serve warm.

- Use different cheeses like cheddar or goat cheese.
 - Add crushed red pepper flakes for a spicy kick.
 - Substitute almond flour with panko breadcrumbs for a crunchier texture.
 - Serve with marinara sauce, ranch dressing, or garlic aioli for dipping.
