Description

Zucchini Bites are flavorful, bite-sized snacks or appetizers made with fresh zucchini, cheese, and herbs, baked or air-fried until golden and crispy. They’re a healthy and tasty way to enjoy this versatile vegetable.


Ingredients

  1. 2 medium zucchinis, sliced into 1/4-inch rounds
    1/2 cup grated Parmesan cheese
    1/2 cup shredded mozzarella cheese
    1/4 cup almond flour or breadcrumbs
    1 teaspoon garlic powder
    1 teaspoon Italian seasoning
    Salt and pepper to taste
    1 large egg, beaten
    Optional: fresh parsley or basil for garnish

Instructions

Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

  1. In a shallow bowl, mix Parmesan, mozzarella, almond flour, garlic powder, Italian seasoning, salt, and pepper.
  2. Dip each zucchini slice into the beaten egg, then coat with the cheese mixture, pressing lightly to adhere.
  3. Place coated zucchini slices on the prepared baking sheet.
  4. Bake for 15-20 minutes, flipping halfway through, until golden and crispy.
