Ingredients

Mousse:

Raspberry Layer:

  • 2 cups fresh raspberries
  • 2 tablespoons sugar
  • Juice of 1 lemon

Garnish:

  • Fresh raspberries
  • White chocolate shavings


Instructions

  1. Prepare the Raspberry Layer: In a saucepan, combine 2 cups fresh raspberries, 2 tablespoons sugar, and the juice of 1 lemon. Cook over medium heat, stirring occasionally, until the raspberries break down and the mixture thickens slightly. Remove from heat and allow to cool. Once cooled, strain the mixture through a fine sieve to remove seeds, resulting in a smooth raspberry sauce.
  2. Make the White Chocolate Mousse: Place the chopped white chocolate in a heatproof bowl and melt it in the microwave for 60 seconds, stirring every 20 seconds to ensure even melting. Let the melted chocolate cool slightly but not harden. In a separate large bowl, whip 2 cups heavy cream with 1 teaspoon vanilla extract and 1 tablespoon sugar (optional) until stiff peaks form. Carefully fold the melted white chocolate into the whipped cream until the mousse is smooth and fully combined.
  3. Assemble the Mousse: Spoon a layer of the prepared raspberry sauce into the bottom of clear serving glasses or bowls. Gently spoon or pipe a layer of white chocolate mousse over the raspberry sauce. If using tall glasses, repeat the layering process to create alternating raspberry and mousse layers for an attractive presentation.
  4. Chill and Garnish: Cover the assembled mousse glasses and refrigerate for at least 30 minutes to allow the mousse to set and flavors to meld. Just before serving, garnish each serving with fresh raspberries and sprinkle white chocolate shavings over the top to add elegance and extra texture.
