Description

Watermelon Mint Popsicles are a refreshing and hydrating frozen treat that combines the juicy sweetness of watermelon with the cool, aromatic flavor of fresh mint. Perfect for hot days, these popsicles are a healthy and delicious way to cool down.


Ingredients

  1. 4 cups seedless watermelon, cubed
  2. 1/4 cup fresh mint leaves
  3. 1 tablespoon lime juice

1-2 tablespoons honey or agave syrup (optional)


Instructions

In a blender, combine watermelon cubes, fresh mint leaves, lime juice, and honey or agave syrup if using. Blend until smooth.

  1. Pour the mixture through a fine mesh sieve to remove pulp if desired for a smoother texture.
  2. Pour the strained juice into popsicle molds.
  3. Insert popsicle sticks and freeze for at least 4-6 hours or until completely frozen.
  4. To release, run warm water over the molds for a few seconds and gently pull out the popsicles.

Notes

  1. Add chunks of watermelon or mint leaves into the molds before freezing for texture.
  2. Use sparkling water instead of still for a fizzy popsicle.
