Description

Ingredients
- 4 cups seedless watermelon, cubed
 - 1/4 cup fresh mint leaves
 - 1 tablespoon lime juice
 
1-2 tablespoons honey or agave syrup (optional)
Instructions
In a blender, combine watermelon cubes, fresh mint leaves, lime juice, and honey or agave syrup if using. Blend until smooth.
- Pour the mixture through a fine mesh sieve to remove pulp if desired for a smoother texture.
 - Pour the strained juice into popsicle molds.
 - Insert popsicle sticks and freeze for at least 4-6 hours or until completely frozen.
 - To release, run warm water over the molds for a few seconds and gently pull out the popsicles.
 
Notes
- Add chunks of watermelon or mint leaves into the molds before freezing for texture.
 - Use sparkling water instead of still for a fizzy popsicle.
 - Mix in other fruits like strawberries or cucumber for different flavors.
 - Add a pinch of salt to enhance the watermelon’s natural sweetness.
