Ingredients
- 4 cups fresh watermelon, cubed and seeded
2 tablespoons fresh lime juice (about 1 lime)
2 tablespoons honey or agave syrup (adjust based on sweetness of watermelon)

Instructions
Blend the Watermelon: Place the cubed watermelon into a blender or food processor. Blend until smooth, adding water as needed to adjust consistency.
- Add Lime and Sweetener: Add lime juice and honey (or agave syrup). Blend again until well combined and adjust sweetness to taste.
- Freeze the Mixture: Pour the watermelon mixture into a shallow dish and freeze for 1 hour.
- Create the Granita Texture: After the first hour, use a fork to scrape the mixture. Freeze again for 30-minute intervals for 3-4 hours, scraping after each interval.
- Serve: Fluff the granita one last time with a fork, spoon into glasses, and garnish with mint or lime wedge if desired.
Notes
- For extra flavor, add berries, herbs like mint or basil, or a dash of spice like cayenne or jalapeño.
