Description

Wacky Cake is a moist, rich chocolate cake made without eggs, butter, or milk. Mixed directly in the pan, it’s a simple, budget-friendly dessert that’s naturally vegan and perfect for any occasion.


Ingredients

  1. 1 1/2 cups all-purpose flour
  2. 1 cup granulated sugar
  3. 1/4 cup unsweetened cocoa powder
  4. 1 tsp baking soda
  5. 1/2 tsp salt
  6. 1 tbsp white vinegar
  7. 1/3 cup vegetable oil
  8. 1 tsp vanilla extract
  9. 1 cup water

Instructions

Preheat your oven to 350°F (175°C).

  1. In an ungreased 8×8-inch (or 9×9-inch) baking dish, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  2. Make three wells in the dry ingredients. Pour vinegar into one, vanilla into another, and oil into the third.
  3. Pour water over all ingredients and stir until fully combined and smooth, making sure to reach the corners.
  4. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  5. Let the cake cool completely in the pan.
  6. Dust with powdered sugar or top with your favorite frosting, if desired.

  • Don’t grease the pan; it’s part of the classic method.
  • Use apple cider vinegar as a substitute for white vinegar if preferred.
