Description

This Velvety White Chocolate Cranberry Fudge is a smooth, creamy treat perfectly balanced with tart dried cranberries and crunchy nuts. Made with sweetened condensed milk and white chocolate, this no-bake fudge is easy to prepare and sets in the refrigerator for a luscious, melt-in-your-mouth confection ideal for holidays or special occasions.

Ingredients

Fudge Base

  • 1 (14 ounce) can sweetened condensed milk
  • 12 ounces white chocolate chips
  • 1 teaspoon vanilla extract

Add-ins

  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Prepare the pan: Line an 8×8 inch baking pan with parchment paper to prevent sticking and make removal of fudge easier once set.
  2. Melt the chocolate mixture: In a microwave-safe bowl, combine the sweetened condensed milk and white chocolate chips. Microwave on medium power in 30-second intervals, stirring well after each interval, until the mixture is completely melted and smooth with no lumps.
  3. Add vanilla: Stir in the teaspoon of vanilla extract evenly throughout the melted mixture to enhance flavor.
  4. Incorporate mix-ins: Gently fold in the dried cranberries and, if using, the chopped pecans or walnuts to distribute them throughout the fudge without breaking them up.
  5. Transfer to pan: Pour the fudge mixture into the prepared pan, spreading it evenly with a spatula to ensure uniform thickness.
  6. Chill to set: Place the pan in the refrigerator and allow the fudge to set for at least 2 hours or until firm to touch.
  7. Cut and serve: Once firm, lift the fudge out of the pan using the parchment paper edges, place on a cutting board, and cut into 16 equal squares for serving.

Notes

  • You can substitute pecans with walnuts or your favorite nuts based on preference or dietary restrictions.
  • For a nut-free version, simply omit nuts entirely without affecting the fudge’s texture.
  • This fudge keeps well when stored in an airtight container in the refrigerator for up to one week.
  • Make sure to microwave in short intervals to prevent burning the white chocolate.
  • Allow fudge to come to room temperature for a few minutes before serving for a softer texture.
