  • 2 tsp cinnamon
  • 6 tbsp granulated sugar
  • 2 cups gluten free 1 to 1 flour (or all purpose flour)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • Pinch sea salt (optional)

Wet Ingredients

  • 1 ¼ cups Vegan milk (almond, coconut, cashew or oat milk)
  • 1 tsp apple cider vinegar
  • 6 tbsp avocado oil (or light olive oil)
  • 1 tsp vanilla extract
  • 2 tbsp Vegan butter (melted)


Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and line an 8 inch by 8 inch pan with parchment paper to prevent sticking and make removal easy.
  2. Prepare Cinnamon Sugar: In a small bowl, combine the coconut sugar and cinnamon evenly, then set this mixture aside for layering in the cake.
  3. Mix Wet Ingredients: In a large mixing bowl, stir together the vegan milk, apple cider vinegar, granulated sugar, avocado oil, and vanilla extract until well combined for a smooth base.
  4. Add Dry Ingredients: Incorporate the gluten free flour, baking powder, baking soda, and a pinch of sea salt into the wet mixture. Stir gently until just combined to avoid overmixing.
  5. Layer Batter and Cinnamon Sugar: Pour about two-thirds of the batter into the prepared pan, spreading into an even layer. Sprinkle half of the cinnamon sugar mixture evenly over this first layer.
  6. Add Remaining Batter and Topping: Pour the remaining batter over the cinnamon sugar layer and spread evenly. Then sprinkle the rest of the cinnamon sugar on top.
  7. Drizzle Vegan Butter: Drizzle melted vegan butter evenly over the top of the cake to add richness and assist in browning.
  8. Bake: Bake in the preheated oven for 27 to 30 minutes, or until the cake has risen and the cinnamon sugar topping is bubbly. Use a toothpick inserted into the center to check doneness; it should come out clean or with a few moist crumbs.
