- 2 tbsp Vegan butter (melted)
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and line an 8 inch by 8 inch pan with parchment paper to prevent sticking and make removal easy.
- Prepare Cinnamon Sugar: In a small bowl, combine the coconut sugar and cinnamon evenly, then set this mixture aside for layering in the cake.
- Mix Wet Ingredients: In a large mixing bowl, stir together the vegan milk, apple cider vinegar, granulated sugar, avocado oil, and vanilla extract until well combined for a smooth base.
- Add Dry Ingredients: Incorporate the gluten free flour, baking powder, baking soda, and a pinch of sea salt into the wet mixture. Stir gently until just combined to avoid overmixing.
- Layer Batter and Cinnamon Sugar: Pour about two-thirds of the batter into the prepared pan, spreading into an even layer. Sprinkle half of the cinnamon sugar mixture evenly over this first layer.
- Add Remaining Batter and Topping: Pour the remaining batter over the cinnamon sugar layer and spread evenly. Then sprinkle the rest of the cinnamon sugar on top.
