Description

Vegan Chocolate Truffles with Blueberries are rich, creamy, and indulgent treats made with a dairy-free chocolate base and fresh blueberries. These melt-in-your-mouth truffles combine dark chocolate and fresh fruit for a sophisticated, yet accessible dessert.

Ingredients

  1. 1 cup dark chocolate (70% cocoa or higher, vegan-friendly)
1/2 cup canned coconut milk (full-fat)
    1/2 tsp vanilla extract
1/4 cup fresh blueberries (plus extra for garnish)
12 tbsp maple syrup (optional, for added sweetness)
Cocoa powder or shredded coconut (for rolling, optional)

Instructions

Prepare the chocolate ganache: In a small saucepan, heat the coconut milk over low heat until warm but not boiling. In a heatproof bowl, break the dark chocolate into small pieces and pour the warm coconut milk over it. Let it sit for a minute to soften, then stir gently until completely melted and smooth.

  1. Add flavorings: Stir in the vanilla extract and maple syrup (if using) to sweeten the ganache slightly.
  2. Blend in the blueberries: Mash the fresh blueberries with a fork and gently fold them into the chocolate ganache mixture.
  3. Chill the mixture: Allow the ganache to cool slightly, then cover and refrigerate for at least 2 hours, until firm enough to roll into balls.
  4. Roll the truffles: Scoop small portions of the ganache and roll them between your hands to form smooth balls.
  5. Coat the truffles: Roll each truffle in cocoa powder, shredded coconut, or crushed nuts if desired. Garnish with fresh blueberries for a decorative touch.
  6. Serve: Store the truffles in an airtight container in the fridge until ready to serve. Let them sit at room temperature for a few minutes for the best texture and flavor.

Notes

  • Raspberry Chocolate Truffles: Swap blueberries for raspberries for a tangy twist.
  • Mint Chocolate Truffles: Add a few drops of peppermint extract for a refreshing flavor.
  • Spiced Chocolate Truffles: Add a pinch of cinnamon or chili powder for a spiced kick.
  • Storage: Store truffles in an airtight container in the refrigerator for up to 1 week. They can also be frozen for up to 2 months.
  • Reheating: These truffles are best enjoyed chilled or at room temperature. Let them sit at room temperature for 10-15 minutes before serving for optimal texture.
