Vegan Banana Pudding is a creamy, indulgent dessert made without dairy or eggs, featuring layers of vanilla custard, ripe bananas, and crunchy vegan wafers for a comforting plant-based treat.
Ingredients
- 3 ripe bananas, sliced
- 1 can (13.5 oz) full-fat coconut milk (or other non-dairy milk of choice)
- 1/2 cup sugar or maple syrup
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 package of vegan vanilla wafer cookies
Instructions
In a medium saucepan, combine the coconut milk, sugar (or maple syrup), cornstarch, and a pinch of salt. Whisk the mixture together over medium heat until the cornstarch dissolves completely.
- Continue to cook the mixture, whisking frequently, until it begins to thicken—this should take about 5-7 minutes.
- Once the pudding thickens to a custard-like consistency, remove it from the heat and stir in the vanilla extract.
- In a 9×9-inch or similar-sized dish, layer the vegan vanilla wafer cookies at the bottom.
- Add a layer of sliced bananas over the cookies, followed by a layer of the thickened pudding. Repeat the layers until all ingredients are used up, finishing with a layer of pudding on top.
- Top with extra banana slices and wafers, if desired.
- Cover and refrigerate for at least 2-3 hours (or overnight) to allow the pudding to set and the flavors to meld.
- Serve chilled and enjoy!

- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. The flavors improve with time, so this pudding is great for make-ahead desserts.
