Ingredients

For the Cookies

  • 1 & 2/3 cups (200g) plain flour
  • 3/4 cup (150g) brown sugar
  • 1/2 cup (100g) melted vegan butter
  • 2 tbsp soy milk
  • 1 tbsp corn flour
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

For the Apple Pie Filling

  • 1 apple, about 120g
  • 1/8 cup (25g) brown sugar
  • 1/2 tbsp vegan butter
  • 1 tsp cornflour
  • 1 tsp cinnamon
  • 4 tbsp water
  • 1 ready-made puff pastry sheet or homemade puff pastry


Instructions

  1. Prepare the Apples: Finely dice your apples into small, even pieces about half a centimetre in size to ensure even cooking.
  2. Cook the Apple Filling: In a saucepan over medium heat, cook the apple pieces with vegan butter, brown sugar, and cinnamon until softened and aromatic. Lower the heat, mix cornflour with water to create a slurry, then stir it into the apples and cook until thickened. Set aside.
  3. Mix Dry Ingredients for Cookies: In a large mixing bowl, whisk together plain flour, cornflour, and cinnamon thoroughly.
  4. Mix Wet Ingredients for Cookies: In another bowl, combine melted vegan butter, brown sugar, soy milk, and vanilla extract until well blended.
  5. Form Cookie Dough: Pour the wet mixture into the dry ingredients and gently mix with a silicone spatula until a soft dough forms. Refrigerate the dough for 30 to 60 minutes to rest and firm up.
  6. Preheat Oven: Preheat your oven to 190°C (375°F) to prepare for baking.
  7. Prepare Pastry and Cookies: Unroll your vegan puff pastry sheet and use a round cutter to cut out circles. Place them on a lined baking tray. Use a cookie scoop to portion the dough onto the center of each pastry circle.
  8. Brush Edges: In a small bowl, whisk together maple syrup and soy milk, and lightly brush this mixture onto the edges of the pastry to help them brown and crisp.
