- Mix Cornstarch and Lime Juice: In a small bowl, combine the cornstarch with the lime juice and set it aside; this helps prevent lumps when adding to the hot mixture.
- Heat the Base Mixture: Pour the mango puree, coconut milk, sweetener, and lime zest into a pan and heat over medium heat until you see gentle bubbling, indicating it’s ready for thickening.
- Thicken the Pudding: Slowly drizzle in the cornstarch and lime juice mixture while continuously stirring. The pudding will thicken within approximately 2 minutes. When it thickly coats your spatula, immediately remove from heat to prevent overcooking.
